Gluten-free Chocolate Brownie

This gluten-free dessert recipe is delicious, moist and fudgy. It is a good choice for those who are gluten sensitive.

Ingredients :

  • Gluten free flour (100g)
  • Sugar (300g)
  • Cocoa powder (60g)
  • Coconut oil or butter (250g)
  • Eggs x4
  • Vanilla extract (1/2 tsp)
  • Salt (optional)
  • Gluten free chocolate (250g)

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated. (Melt down the gluten free chocolate to make it mix easier) Spray an eight by twelve inch baking dish with cooking spray and bake it for thirty minutes or until a toothpick inserted in the centre comes out clean.

Gluten-free Apple Cake

Gluten-free apple cakes are a fantastic pudding that is moist and delicious! It is a good choice for those who are gluten sensitive or allergic.

Ingredients:

  • Gluten free flour (150g)
  • Baking Powder (2 tsp)
  • Cinnamon (one stick)
  • Salt (optional)
  • Eggs, beaten (4)
  • Light Brown Sugar (200g)
  • Butter or Coconut Oil (softened) (20g)
  • Glace Cherries & Raisins (100g)
  • Apples (400g)

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated. Pour into a greased cake pan and bake for thirty minutes or until the top is golden brown.

Lemon Bars

This gulten free dess is perfect to finsish a meal off!

Ingredients:

  • Gluten free flour (200g)
  • Eggs (x2)
  • Butter/Coconut Oil (softened) (20g)
  • Salt (optional)
  • Sugar (250g)
  • Lemon Zest

Instructions:

Get one cup of Gluten Free Flour and mix it with a heaping teaspoon of salt to make a Gluten Free Crust. Press the crust into a greased and parchment lined pan with your fingers or by using the bottom of a glass to flatten it out as evenly as possible. In another bowl, beat eggs until they are light yellow in colour and then add sugar, melted butter/coconut oil (softened), salt (optional), and lemon zest. Mix together with a whisk until it is well combined. Pour the mixture over Gluten Free Crust, sprinkle Glace Cherries & Raisins on top (mixing them in before you pour the batter will make everything sink to the bottom of your pan!), and then bake for 25 minutes at 350 degrees.

Pumpkin Pie with Coconut Crust

Ingredients:

  • Gluten free flour (4tbs)
  • Eggs (x3)
  • Butter/Coconut Oil (softened) (50g)
  • Salt (optional)
  • Sugar (125g)
  • Pumpkin Puree or Pumpkin Pie Mix

Instructions:

Get one cup of Gluten Free Flour and mix it with a heaping teaspoon of salt to make Gluten Free Crust, then press the crust into a greased and parchment lined pan with your fingers or by using the bottom of a glass to flatten it out as evenly as possible. In another bowl, beat eggs until they are light yellow in colour and add sugar, melted butter/coconut oil (softened), salt (optional) and Glace Cherries. Mix together with a whisk until they are well combined. Pour the mixture over Gluten Free Crust, add Pumpkin Puree or Pumpkin Pie Mix on top and then bake for 25 minutes at 350 degrees.

Ingredients:

  • Gluten free flour (150g)
  • Baking powder (make sure it is Gluten Free) (1tps)
  • Cinnamon (one stick)
  • ground ginger (20g)
  • Salt (5g)
  • Brown sugar (150g)
  • Eggs (x2)
  • Butter (50g)
  • Vanilla extract

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated. Put in cupcake liners and bake for twenty-five minutes.

Chocolate Chip Cookies

Ingredients:

  • Gluten free flour (200g)
  • Baking soda (1 tsp)
  • Salt (optional) (pinch)
  • Coconut oil (1 tsp)
  • Brown sugar (150g)
  • Eggs (x1)
  • Oil (50mil)

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated then scoop out onto a prepared cookie sheet with parchment paper, about two tablespoons per cookie dough ball, flattening them out with a fork. Bake for twenty minutes or until the cookies are brown in colour and crispy on the edges.

Ingredients:

  • 3/4 cups Gluten Free Flour
  • 1 cup Gluten Free Cake Mix
  • 2 teaspoons Glace Cherries, dried
  • 2 teaspoons Glace Cherries, diced
  • 1 teaspoon Glace Cherries, chopped
  • 1 tablespoon Glace Cherries, whole
  • 1 teaspoon Glace Cherries, candied
  • 2 tablespoons Coconut Oil (solid)
  • 3 tablespoons Brown Sugar

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated then scoop out onto a prepared cookie sheet with parchment paper. Bake for twenty minutes or until the cookies are brown in colour and crispy on the edges.

Gluten Free Oatmeal Raisin Muffins 

  • 3/4 cups Gluten Free Flour
  • 1 cup Gluten Free Oatmeal
  • 2 teaspoons Glace Cherries, dried
  • 2 teaspoons Glace Cherries, diced
  • 1 teaspoon Glace Cherries, chopped
  • 1 tablespoon Glace Cherries, whole
  • 1 teaspoon Glace Cherries, candied
  • 3/4 cups Brown Sugar or Agave Nectar
  • 3/4 cups Gluten Free Baking Mix
  • 2 tablespoons Coconut Oil (solid)
  • 1 egg or Glutten-free egg substitute

Instructions:

Preheat the oven to 350 degrees and mix all of the ingredients until they are nicely incorporated then scoop out onto a prepared muffin pan with parchment paper. Bake for twenty minutes or until the muffins are brown in colour and crispy on the edges.

Almond Butter Brownies

Almond butter brownies are not only gluten-free, but also vegan and refined sugar-free. I like to think of these as my healthy dessert! They’re a great recipe for those who find it difficult or time consuming to prepare recipes that fit into other dietary restrictions. And because they don’t contain flour, eggs, white sugar, or butter, they’re also a lot easier to prepare and pack into lunch boxes.

Ingredients:

  • ½ cup almond butter
  • ¾ cup granulated sugar*
  • pinch of salt
  • ½ teaspoon baking powder*
  • ¼ cup cocoa or cacao (or unsweetened cocoa)
  • ½ cup pumpkin puree
  • ⅓ cup almond milk*

Instructions:

Preheat oven to 350 F. In a large mixing bowl, mix together the dry ingredients – including the salt, sugar, and baking powder*. In a separate bowl, mix the wet ingredients – including almond butter*, pumpkin puree, and milk until well combined. Add dry ingredients to wet in small batches and stir between additions just enough for it to be mixed together (don’t over-mix). Take a baking dish out of your oven that is about 12″x18″ and line it with parchment paper. Pour batter into the baking dish, smoothing out any bubbles that form on top of the surface, and then bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean (or mostly clean – you can’t really tell when these are completely done). Remove from oven and let cool for 15 minutes before cutting into squares.

Strawberry Shortcake

This strawberry shortcake recipe is gluten-free, vegan and refined sugar free.

Ingredients:

  • ½ cup of frozen strawberries (or fresh)
  • ¼ teaspoon vanilla extract*
  • Sugar or honey to taste* (optional)*
  • Gluten Free Flour Blend
  • Buttery spread
  • Granulated sugar
  • almond milk (or other non-dairy milk)*

Instructions:

Mix together the gluten free flour blend*, buttery spread* and sugar in a bowl. Add enough almond or soy milk to create a dough that doesn’t leave your hands feeling wet*. Press out into a 12″x18″ rectangle, then cut into smaller rectangles with a pizza cutter*. Place on parchment paper, then bake at 350 F for about 12 minutes. Let cool before adding the filling and topping ingredients to complete your strawberry shortcake!

Rice Krispies Treats Recipe 

This Gluten-free Rice Krispies Treats recipe is easy to make and can be whipped up in less than 30 minutes.

Ingredients:

  • ¾ cup butter
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup milk or soy milk
  • ¼ cup white sugar
  • ¾ teaspoon cornstarch or arrowroot powder
  • Up to ½ cup Gluten-free Rice Krispies cereal

Instructions:

Preheat oven to 350 degrees F. Grease an 11″x17″ baking dish with butter or cooking spray. In a medium saucepan, mix together the Gluten-free rice krispie’s and milk, salt, sugar and cornstarch. Heat on medium-low heat, stirring constantly until the Gluten-free Rice Krispies are soft and have absorbed all of the liquid. Pour into a large mixing bowl. Add butter, salt and vanilla to Gluten free rice krispie mixture in pan and stir well.

Pour Gluten Free Rice Krispies mixture into the greased dish. Use a spatula to spread Gluten-free Rice Krispies mixture evenly across the pan. Bake at 350 degrees F for about 15 minutes or until rice krispie treats are golden brown and crispy on top. Let Gluten Free Rice Krispies Treats cool before cutting into squares with a pizza cutter!
